
Mediterranean Turkey & orzo salad

Ingredients
- 400g Turkey Mince
- 150g orzo
- 1 red pepper (sliced)
- 1 courgette (sliced)
- 150g cherry tomatoes
- 75g feta (crumbled)
- 2 handfuls rocket or spinach
- 2 tbsp olive oil
- FOR THE SPICES:
- 1 tsp paprika
- 1 tsp cumin
- 1 garlic clove (minced)
- FOR THE DRESSING:
- Juice of 1 lemon
- 3 tbsp olive oil
- 1 tsp Dijon mustard
- 1 tsp honey
Method
Step 1
Roast the peppers, courgettes and tomatoes at 200 degrees celsius for 20-25 minutes.
Step 2
Cook orzo according to the packet; drain and fluff.
Step 3
Cook turkey mince according to the instructions on the packet with olive oil and spices until browned and slightly crispy.
Step 4
Combine orzo, roasted vegetables, turkey mince and leaves.
Step 5
Whisk dressing and toss through.
Step 6
Top with crumbled feta. Serve and enjoy.
